Seasonal Weekend Special Oct 8-10-Rainbow Trout

Our next stop on our culinary tour of sustainable fisheries is the exquisite and beautiful Rainbow Trout. Rainbow Trout are members of the Salmon Family with similar taste and texture but are vastly underused. Our butterflied boneless fillets are pan seared with extra virgin olive oil and served with capers, toasted almonds, sauteed mushrooms and a creamy brown butter sauce. Baked potato fries sprinkled with fresh rosemary and broiled cauliflower round out this seasonal dish which is as delicious as it is sustainable.
